    Latex doesn't have this internally. If you're using the AMS package,
    I use:

       \newcommand{\indep}{{\bot\negthickspace\negthickspace\bot}}

    and if you're not, I use

       \newcommand{\indep}{{\;\bot\!\!\!\!\!\!\bot\;}}

    Then you can write $X \indep Y | Z$
